Coconut oil is a solvent. The absolute easiest way to do it is to get a concentrate and dissolve it into melted coconut oil. That way you know exactly how many milligrams are distributed into whatever amount of coconut oil you're using. And it's easy to figure out the dose.
Depend on what concentrate you are using, it may not be decarbed, so you may need to heat the infused coconut oil on the stove for a while to actually convert it to THC and get high from it (but the raw form-thca- works really well for pain relief without the high)
From there you can cook just about anything with it that you would put coconut oil in.

I almost feel like OP's wife may be on the spectrum because there's something unique about the thin layer of chocolate on ice cream bars like a magnum or such, I used to eat off all the chocolate and then the ice cream afterwards. See, in this situation can be solved via social connections. I love frosting. My coworker loved cake. We would split a cupcake, I cut the frosting part off the top with a knife and she would take the cake part. Problem solved, bam.
At the grocery store you can get a chocolate syrup that will harden on the ice cream. When she does this re-coat them. See how long she just keeps eating the shell. Document it and return with your findings.
Or get a bottle of that ice cream chocolate sauce that freezes on contact with icecream and just dump it on a plate and stick it in the freezer so she can have the similar texture and thinness
Does she later eat the ice cream? Or does she put them in there with the expectation that someone else will eat them? Because that changes my opinion on this
